Ingredients

The shrimp

  • 6 oz small shrimp, peeled and deveined

The coating

  • 1 cup panko bread crumbs
  • cup grated Parmesan
  • ¼ teaspoon coarse salt
  • 1 tablespoon vegetable oil
  • cup all-purpose flour
  • 1 large egg, lightly beaten

For serving

  • as needed ketchup

Instructions

  1. Preheat the oven to 400°F (207°C). Rinse and dry the shrimp.
  2. Spread the panko on a baking sheet and bake for 3 minutes until light brown.
  3. Mix the baked panko with Parmesan and salt, then drizzle with oil.
  4. Prepare separate dishes for flour and beaten egg.
  5. Increase the oven temperature to 450°F (232°C) and prepare a wire rack on a baking sheet with cooking spray.
  6. Coat the shrimp in flour, dip in egg, then coat with the panko mixture.
  7. Place the coated shrimp on the rack and bake for 3 minutes on one side, then flip and bake for another 3 minutes.
  8. Serve the popcorn shrimp with ketchup.
