Ingredients

The shrimp

  • 1 pound shrimp (raw, peeled and deveined)

The breading

  • ¾ cup whole-wheat breadcrumbs
  • ¼ cup parsley (fresh, chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon lemon zest
  • ¼ teaspoon salt
  • 1 large egg
  • to taste none olive oil (for baking)

Instructions

  1. Preheat the oven to 400°F and grease a large baking sheet with olive oil.
  2. Pat the shrimp dry and set aside.
  3. In a small bowl, mix breadcrumbs, parsley, garlic, lemon zest, and salt.
  4. In another bowl, beat the egg.
  5. Bread the shrimp by dipping them in the egg and then coating with the breadcrumb mixture.
  6. Place the coated shrimp on the baking sheet and drizzle or spray with olive oil.
  7. Bake for about 13 to 14 minutes until the shrimp are cooked through and golden brown.
