Chipotle Bacon Wrapped Chicken Bites

Ingredients

The chicken

  • 1 pound boneless-skinless chicken breast, cut into 1 inch pieces
  • to taste garlic salt
  • to taste pepper
  • 1 pound bacon
  • ½ cup low carb brown sugar
  • 1 tablespoon pure ground chiles
  • 1 teaspoon ground chipotle chile pepper
  • 1 teaspoon ground cumin

The sauce

  • 2 tablespoons low sugar ketchup
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Sukrin Fiber Syrup Gold or honey or erythritol
  • 1 tablespoon water

Instructions

  1. Preheat the oven to 375°F and prepare a sheet pan with foil and a cooling rack.
  2. Mix the Chipotle Chile 'Brown Sugar' seasoning ingredients in a small bowl.
  3. Prepare the Sweet & Sour Sauce by mixing its ingredients in another small bowl.
  4. Cut the chicken into 1 inch pieces and season with garlic salt and pepper.
  5. Cut the bacon into thirds and roll each piece of chicken in a piece of bacon, placing seam side down.
  6. Coat the bacon-wrapped chicken in the Chipotle seasoning and place on the rack.
  7. Brush or spoon the Sweet & Sour Sauce on each piece and sprinkle with any remaining seasoning.
  8. Bake for 20 minutes, then broil for 5-8 minutes on each side until crispy.
