Chipotle Bacon Wrapped Chicken Bites

Instructions
- Preheat the oven to 375°F and prepare a sheet pan with foil and a cooling rack.
- Mix the Chipotle Chile 'Brown Sugar' seasoning ingredients in a small bowl.
- Prepare the Sweet & Sour Sauce by mixing its ingredients in another small bowl.
- Cut the chicken into 1 inch pieces and season with garlic salt and pepper.
- Cut the bacon into thirds and roll each piece of chicken in a piece of bacon, placing seam side down.
- Coat the bacon-wrapped chicken in the Chipotle seasoning and place on the rack.
- Brush or spoon the Sweet & Sour Sauce on each piece and sprinkle with any remaining seasoning.
- Bake for 20 minutes, then broil for 5-8 minutes on each side until crispy.
