Chipotle Bacon Wrapped Chicken Bites

Ingredients

The Chicken

  • 1 pound boneless-skinless chicken breast, cut into 1 inch pieces
  • to taste garlic salt
  • to taste pepper
  • 1 pound bacon
  • ½ cup low carb brown sugar
  • 1 tablespoon pure ground chiles
  • 1 teaspoon ground chipotle chile pepper
  • 1 teaspoon ground cumin

The Sauce

  • 2 tablespoons low sugar ketchup
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Sukrin Fiber Syrup Gold or honey or erythritol
  • 1 tablespoon water

Instructions

  1. Preheat the oven to 375°F and place the rack in the middle position.
  2. Line a large sheet pan with foil and place a cooling rack in the pan.
  3. Mix the ingredients for the Chipotle Chile 'Brown Sugar' Seasoning in a small bowl.
  4. Mix the Sweet & Sour Sauce together in another small bowl.
  5. Cut the chicken into 1 inch pieces and season with garlic salt and pepper.
  6. Cut the bacon into thirds and roll each piece of chicken in a piece of bacon, placing seam side down on the rack.
  7. Coat each bacon-wrapped chicken piece in the Chipotle Chile 'Brown Sugar' seasoning.
  8. Brush the Sweet & Sour sauce onto each piece and sprinkle with any leftover seasoning.
  9. Bake for 20 minutes, then broil for 5-7 minutes, turn the pieces over and broil for another 5-8 minutes.
