Low Carb Bacon Wrapped Buffalo Chicken Bites

Ingredients

  • 1 pound boneless chicken breasts, cut into 1 inch pieces
  • 1 pound regular cut bacon, thin
  • ½ cup Franks Red Hot Buffalo Sauce
  • ¼ cup Franks Red Hot Buffalo Sauce for basting

Instructions

  1. Cut the chicken into 1 inch pieces and marinate in ½ cup buffalo sauce in the refrigerator overnight.
  2. Preheat the oven to 375°F and set a cooling rack in a large sheet pan.
  3. Cut the bacon into thirds and place them in rows on a cutting board.
  4. Wrap each piece of chicken in a piece of bacon and place seam side down on the cooling rack.
  5. Baste each chicken bite with ¼ cup buffalo sauce using a pastry brush.
  6. Bake in the oven for 20 minutes, then broil for 5-7 minutes, turning the bites halfway through.
