Ingredients

The spice rub

  • 2 cloves garlic, minced
  • 2 inches fresh ginger, grated
  • 2 Tbsp vegetable oil
  • ½ tsp toasted sesame oil
  • 2 Tbsp soy sauce
  • 2 Tbsp brown sugar
  • 2 Tbsp 5 spice powder

The chicken

  • 4 lbs bone-in skin-on chicken pieces

The base

  • 1 medium onion
  • 2 Tbsp rice wine

Instructions

  1. Combine garlic, ginger, vegetable oil, sesame oil, soy sauce, brown sugar, and 5 spice powder to make the spice rub.
  2. Rub the spice mixture all over the chicken pieces, ensuring it's under the skin as well.
  3. Dice the onion and place it in the bottom of the slow cooker, then pour rice wine over it.
  4. Layer the chicken pieces on top of the onion in the slow cooker, packing them closely.
  5. Cover and cook on high for four hours.
  6. After cooking, remove the chicken from the slow cooker and place it on a baking sheet.
  7. Adjust the oven rack to 5 inches from the broiler and broil the chicken for 5 minutes until the skin is crispy.
