Tuna Bulgur Tartare

Ingredients

The tartare

  • 227 g fresh yellow fin tuna, patted dry
  • ½ cup dry bulgur, soaked overnight and drained
  • 1 piece pink grapefruit, flesh chopped
  • ½ avocado finely diced
  • ¼ cup shelled pistachios, chopped
  • 2 tbsp fresh cilantro, finely chopped
  • 2 tbsp fresh mint, finely chopped
  • 1 tbsp chives, finely chopped
  • 1 tbsp unpasteurized honey
  • 1 tsp unseasoned rice vinegar
  • 1 tsp toasted sesame oil
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • a pinch cayenne pepper
  • the grated zest of ½ grapefruit

Optional garnish

  • as needed avocado slices
  • as needed microgreens
  • as needed toasted sesame oil

Instructions

  1. Cut the tuna into small cubes and place in a mixing bowl with the other ingredients.
  2. Stir until well combined and adjust seasoning as needed.
  3. Use a cookie cutter to shape the tartare on a serving plate, pressing down to flatten.
  4. Remove the cutter and repeat with the remaining mixture.
  5. Serve immediately or chill loosely covered until ready to serve.
  6. Garnish with avocado slices, microgreens, and sesame oil before serving.
