Honey Roasted Cashews

Ingredients

The cashews

  • 2 cups raw whole cashews
  • 2 teaspoons finely chopped fresh rosemary leaves

The coating

  • ¼ cup honey
  • 2 teaspoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon smoked paprika
  • teaspoon cayenne pepper (optional)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together honey, olive oil, smoked paprika, kosher salt, and cayenne pepper.
  3. Add the cashews to the bowl and fold gently until they are evenly coated.
  4. Stir in 1 teaspoon of the chopped rosemary.
  5. Spread the cashews in a single layer on the prepared baking sheet.
  6. Bake for 13 to 18 minutes, tossing every 5 minutes to ensure even cooking.
  7. Once golden brown and fragrant, remove from the oven and sprinkle with additional salt and the remaining rosemary.
  8. Serve warm or allow to cool before serving.
