Ingredients

The salad

  • 4 cups fresh kale, torn into small pieces
  • 1 pinch salt
  • 1 tablespoon grape seed oil
  • 2 boneless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon ground pepper
  • cup shaved parmesan cheese
  • ¼ cup pepitas, unsalted

The dressing

  • 1 serving Homemade Caesar Dressing

Instructions

  1. Massage the torn kale with a pinch of salt for 3-4 minutes until it turns a darker green and softens.
  2. Prepare the Caesar dressing in a food processor and set aside.
  3. Season the chicken breasts with salt and pepper on both sides.
  4. Heat a skillet over medium-high heat, add grape seed oil, and sauté the chicken for 4-5 minutes on each side.
  5. Remove the chicken from the pan, slice it, and set aside.
  6. In a large bowl, combine the massaged kale, parmesan cheese, pepitas, and sliced chicken. Serve with the Caesar dressing on the side.
