Ingredients

Salad ingredients

  • 1 lb cooked chicken, shredded
  • 1 head kale, washed and chopped
  • 2 cups red cabbage, shredded
  • ½ cup red onion, diced
  • 1 cup parmesan cheese, shredded
  • ½ cup almonds, sliced

Dressing ingredients

  • 1 tbsp white wine vinegar
  • 1 lemon juiced
  • 1 tbsp honey
  • 2 tbsp olive oil
  • ½ tsp dijon mustard
  • 1 pinch salt

Instructions

  1. Whisk together lemon juice, white wine vinegar, olive oil, dijon mustard, honey, and salt in a small bowl to make the dressing.
  2. In a large bowl, add chopped kale and 1 tbsp of olive oil, then massage the kale for 2-3 minutes until tender.
  3. Add shredded chicken, cabbage, red onion, parmesan, almonds, and the dressing to the bowl. Combine well and serve.
