Kale Chicken Caesar Wraps

Ingredients

The filling

  • 1 bunch lacinato kale
  • 1 15 oz. can chickpeas
  • 2 pieces carrots
  • ½ rotisserie chicken chopped
  • ¼ cup grated Parmesan
  • ¼ cup creamy Caesar dressing
  • to taste none freshly cracked black pepper

The wraps

  • 4 large tortillas (burrito size)

Instructions

  1. Remove the stems from the kale and chop the leaves into thin strips.
  2. Rinse the chopped kale in cool water and drain well.
  3. Drain and rinse the chickpeas, then shred the carrots.
  4. Chop the rotisserie chicken into small pieces.
  5. Combine the kale, chickpeas, carrots, chicken, and Parmesan in a bowl.
  6. Add the Caesar dressing and mix until everything is evenly coated.
  7. Place a heaping cup of the mixture in the center of a tortilla, add pepper if desired, and roll it up like a burrito.
  8. Serve immediately or refrigerate for up to a day.
