Instructions
- Preheat the oven to 350°F and line an 8x8 baking dish with parchment paper or nonstick spray.
- Mix together all crust ingredients until well combined.
- Press the crust mixture into the bottom of the baking dish, prick with a fork several times, and bake for 15 minutes. Let cool for at least 15 minutes.
- In a saucepan over medium heat, combine cashew butter, coconut oil, and maple syrup. Heat until melted, then stir in vanilla and salt.
- Pour the cashew butter mixture over the cooled crust and place in the freezer for 30 minutes.
- Prepare the chocolate layer by heating coconut oil, cocoa powder, and maple syrup in a saucepan until melted. Stir in vanilla and salt.
- Pour the chocolate layer over the frozen middle layer and refrigerate for at least 1 hour, preferably overnight.
- Cut into bars and sprinkle with sea salt before serving.
