Sticky Garlic Chicken and Broccoli

Ingredients

The chicken and broccoli

  • pounds boneless, skinless chicken breast tenders
  • 1 cup buttermilk
  • 1 cup panko breadcrumbs
  • ¼ cup cornmeal
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • 3–4 cups broccoli florets

The sauce

  • 3 cloves garlic
  • 1 inch piece fresh ginger
  • ¾ cup light soy sauce
  • ½ cup water
  • ½ cup hoisin sauce
  • 2 tablespoons honey
  • 1 tablespoon white vinegar
  • 2 teaspoons sambal oelek

Instructions

  1. Preheat the oven to 450°F and prepare a baking sheet with foil and a cooling rack.
  2. Soak the chicken in buttermilk.
  3. Mix panko, cornmeal, olive oil, salt, and pepper in a bowl.
  4. Coat the chicken pieces in the breadcrumb mixture and place them on the baking sheet.
  5. Bake the chicken for 10 minutes, flip, and bake for an additional 10 minutes.
  6. While the chicken bakes, pulse sauce ingredients in a food processor and optionally simmer in a skillet.
  7. Prepare broccoli by boiling for 1 minute and then plunging into ice water or stir-frying until tender-crisp.
  8. Once the chicken is done, dip each piece in the sauce and return to the baking sheet.
  9. Bake for another 5 minutes, dip again in sauce, and let rest before serving.
  10. Serve the chicken over rice with broccoli and extra sauce.
