Skinny Cheesecake with Strawberries

The strawberry topping

Instructions
- Preheat the oven to 375°F and prepare two mini 1-cup jars in a baking dish filled with water.
- In a food processor, blend the yogurt, sugar, egg, vanilla, and cornstarch until smooth.
- Divide the mixture between the jars and bake for 23-26 minutes until set.
- Cover the jars and chill in the fridge for at least 4 hours.
- For the topping, cook the sliced strawberries with a splash of water over medium heat until they soften.
- Stir in honey to taste and let the sauce cool.
- Top the cheesecake jars with the strawberry sauce and garnish with extra yogurt and strawberries.
