Grilled Halibut With Basil-Shallot Butter

Ingredients

The basil-shallot butter

  • cups fresh basil leaves
  • 1 large shallot
  • 4 oz. unsalted butter
  • 1 tsp. finely grated lemon zest

The fish

  • 6 oz. halibut fillets
  • to taste extra-virgin olive oil
  • to taste kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Chop basil and shallot in a food processor, then blend with butter and season with salt.
  2. Preheat the grill to medium heat.
  3. Rub halibut fillets with olive oil and season with salt and pepper.
  4. Grill the halibut for about 4 minutes on each side until just opaque.
  5. Serve the fish with basil-shallot butter spread on top and additional butter on the side.
