Grilled Halibut With Basil-Shallot Butter

The basil-shallot butter

The fish

halibut fillets

extra-virgin olive oil

kosher salt

freshly ground black pepper
Instructions
- Chop basil and shallot in a food processor, then blend with butter and season with salt.
- Preheat the grill to medium heat.
- Rub halibut fillets with olive oil and season with salt and pepper.
- Grill the halibut for about 4 minutes on each side until just opaque.
- Serve the fish with basil-shallot butter spread on top and additional butter on the side.
