Dairy Free Crockpot Hot Chocolate

Ingredients

  • 2 cups whole raw cashews (soaked overnight or at least 10 hours)
  • 8 cups water (divided)
  • 1 can full fat coconut milk (13.66 oz / 403 mL)
  • 1 Tbsp vanilla extract
  • ½ tsp sea salt
  • 7 oz dairy free dark chocolate, chopped
  • ¼ cup cocoa powder
  • ¾ cup maple syrup

Instructions

  1. Soak the cashews overnight, then drain and rinse them.
  2. Blend the soaked cashews with 4 cups of fresh water until completely smooth to make cashew milk.
  3. Add the cashew milk and the remaining ingredients to a slow cooker and whisk to combine.
  4. Cook on high for about 1.5 hours until heated through.
  5. Taste and adjust sweetness or thickness as desired.
  6. Optionally blend with an immersion blender before serving.
  7. Serve topped with dairy free whipped cream or marshmallows.
