Simple Sweet Potato Porridge

Instructions
- Preheat the oven to 425°F.
- Poke holes in the sweet potatoes and place them on a baking sheet lined with foil to catch drippings.
- Bake the sweet potatoes for 45 minutes until cooked.
- Let the sweet potatoes cool, then cut them in half and scoop out the flesh into a mixing bowl.
- Add collagen and shredded coconut to the sweet potato flesh and mash together.
- Store the mixture in the fridge until ready to eat.
- Reheat and top with berries, almond butter, and any other desired toppings.
