Simple Sweet Potato Porridge

Ingredients

The porridge

  • 2 whole sweet potatoes
  • 4 tbsp collagen
  • ½ cup unsweetened shredded coconut
  • cups fresh or frozen berries
  • cup almond butter

Optional toppings

  • to taste coconut milk
  • to taste pumpkin seeds

Instructions

  1. Preheat the oven to 425°F.
  2. Poke holes in the sweet potatoes and place them on a baking sheet lined with foil to catch drippings.
  3. Bake the sweet potatoes for 45 minutes until cooked.
  4. Let the sweet potatoes cool, then cut them in half and scoop out the flesh into a mixing bowl.
  5. Add collagen and shredded coconut to the sweet potato flesh and mash together.
  6. Store the mixture in the fridge until ready to eat.
  7. Reheat and top with berries, almond butter, and any other desired toppings.
