Mini Sweet Potato Toasts With Collagen Raspberry Jam

Instructions
- Preheat the oven to 400°F.
- Wash and scrub the sweet potatoes, then slice them into ½ inch thick pieces.
- Toss the sweet potato slices in a bowl with cinnamon and avocado oil.
- Arrange the slices in a single layer on a baking tray.
- Bake in the oven for 25 minutes, flipping halfway through.
- While the sweet potatoes are baking, prepare the jam by adding raspberries, collagen, water, and chia seeds to a small pot over low heat.
- Mash and stir the mixture for about 5 minutes until it thickens, then remove from heat.
- Once the sweet potatoes are done, top each slice with peanut butter and the collagen raspberry chia jam.
