Ingredients

The toasts

  • 2 medium sweet potatoes
  • 1 tsp cinnamon
  • 1 tsp avocado oil

The chia jam with collagen

  • 1 cup raspberries
  • 1 scoop Ancient Nutrition Multi Collagen Protein
  • ¼ cup chia seeds
  • 1 tsp water

The middle

  • ½ cup peanut butter (or nut butter to taste for paleo)

Instructions

  1. Preheat the oven to 400°F.
  2. Wash and scrub the sweet potatoes, then slice them into ½ inch thick pieces.
  3. Toss the sweet potato slices in a bowl with cinnamon and avocado oil.
  4. Arrange the slices in a single layer on a baking tray.
  5. Bake in the oven for 25 minutes, flipping halfway through.
  6. While the sweet potatoes are baking, prepare the jam by adding raspberries, collagen, water, and chia seeds to a small pot over low heat.
  7. Mash and stir the mixture for about 5 minutes until it thickens, then remove from heat.
  8. Once the sweet potatoes are done, top each slice with peanut butter and the collagen raspberry chia jam.
