Easy Homemade Sweet Potato Puree

Instructions
- Preheat the oven to 400ºF and line a baking sheet with tin foil.
- Slice the sweet potato in half lengthwise and spray both sides with coconut oil cooking spray.
- Pierce the sweet potato with a fork a few times on both sides.
- Place the sweet potato halves on the baking sheet and roast for about 40 minutes until tender.
- Let the sweet potatoes cool for 5 minutes, then scoop out the flesh and place it in a food processor.
- Blend the sweet potato until smooth.
