BBQ Mushroom Pizza

Ingredients

The pizza

  • 1 lb store-bought pizza dough
  • cup barbecue sauce
  • 6 oz fresh mozzarella
  • 2 oz smoked Gouda
  • ½ small red onion
  • Kosher salt
  • freshly ground pepper
  • crushed red pepper flakes
  • cilantro leaves

The toppings

  • 6 oz mixed mushrooms
  • 2 Tbsp extra-virgin olive oil

Instructions

  1. Preheat the oven to 475°F and prepare the mushrooms with olive oil.
  2. Coat a cast-iron skillet with olive oil and stretch the pizza dough to fill the pan.
  3. Pre-bake the crust for about 5 minutes until it starts to set.
  4. Spread barbecue sauce over the crust and top with mozzarella, Gouda, red onion, and mushrooms. Season with salt and pepper.
  5. Bake the pizza for 16-20 minutes until the crust is golden and the cheese is melted.
  6. Broil the pizza for about 2 minutes until the mushrooms are crispy and the cheese is bubbly.
  7. Drizzle with more barbecue sauce and top with red pepper flakes and cilantro.
