Chocolate and Salted Caramel Ice Cream Bites

salted caramel ice cream, softened
The Coating

chocolate chips

coconut oil
The Topping

chopped toasted walnuts
Instructions
- Line 12 muffin tins with liners.
- Fill each muffin tin with chocolate ice cream and spread evenly.
- Freeze the tins for 1 hour to solidify the ice cream.
- Melt chocolate chips and coconut oil in a double boiler until smooth.
- Mix ½ cup of the melted chocolate with ¾ cup of walnuts.
- Spoon the chocolate walnut mixture over the frozen ice cream layer.
- Freeze for another hour to set the chocolate walnut layer.
- Add a layer of salted caramel ice cream on top of the chocolate walnut layer.
- Return to the freezer for another hour.
- Top with the remaining melted chocolate mixture and sprinkle with leftover walnuts.
- Freeze for at least 45 minutes before serving.
