Chocolate and Salted Caramel Ice Cream Bites

Ingredients

The Ice Cream

  • ¾ pint chocolate ice cream, softened
  • ¾ pint salted caramel ice cream, softened

The Coating

  • 2 cups chocolate chips
  • cup coconut oil

The Topping

  • 1 cup chopped toasted walnuts

Instructions

  1. Line 12 muffin tins with liners.
  2. Fill each muffin tin with chocolate ice cream and spread evenly.
  3. Freeze the tins for 1 hour to solidify the ice cream.
  4. Melt chocolate chips and coconut oil in a double boiler until smooth.
  5. Mix ½ cup of the melted chocolate with ¾ cup of walnuts.
  6. Spoon the chocolate walnut mixture over the frozen ice cream layer.
  7. Freeze for another hour to set the chocolate walnut layer.
  8. Add a layer of salted caramel ice cream on top of the chocolate walnut layer.
  9. Return to the freezer for another hour.
  10. Top with the remaining melted chocolate mixture and sprinkle with leftover walnuts.
  11. Freeze for at least 45 minutes before serving.
