Easy Vegan Coleslaw

Ingredients

Dressing

  • 1 cup raw cashews (soaked)
  • cup water
  • 1 Tbsp maple syrup
  • 2 tsp spicy brown mustard
  • Tbsp white vinegar
  • 2 tsp apple cider vinegar
  • 3 Tbsp chopped onion
  • ½ tsp celery salt
  • to taste sea salt and black pepper

Slaw

  • 2 cups shredded carrot
  • 4 cups shredded red or green cabbage

Instructions

  1. Soak cashews in hot water for 1 hour or in cool water for 6 hours or overnight.
  2. Drain the cashews and add them to a blender with water, maple syrup, mustard, white vinegar, apple cider vinegar, onion, and celery salt.
  3. Blend until creamy and smooth, adjusting thickness with more water or cashews as needed.
  4. Taste and adjust seasoning with salt, pepper, more celery salt, onion, maple syrup, mustard, or vinegar as desired.
  5. In a mixing bowl, combine shredded carrot and cabbage, then pour the dressing over the top.
  6. Toss everything together to combine and serve immediately or chill for about 4 hours.
