Easy Vegan Coleslaw

Instructions
- Soak cashews in hot water for 1 hour or in cool water for 6 hours or overnight.
- Drain the cashews and add them to a blender with water, maple syrup, mustard, white vinegar, apple cider vinegar, onion, and celery salt.
- Blend until creamy and smooth, adjusting thickness with more water or cashews as needed.
- Taste and adjust seasoning with salt, pepper, more celery salt, onion, maple syrup, mustard, or vinegar as desired.
- In a mixing bowl, combine shredded carrot and cabbage, then pour the dressing over the top.
- Toss everything together to combine and serve immediately or chill for about 4 hours.
