Ingredients

The dressing

  • scant ¾ cup Vegan Mayo
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon pure maple syrup
  • ¾ teaspoon celery seed
  • ¼ teaspoon sea salt
  • to taste freshly ground black pepper

The coleslaw

  • 8 cups shredded cabbage
  • 2 medium carrots, peeled into thin ribbons
  • 3 scallions, chopped

Instructions

  1. Make the dressing by whisking together the mayo, apple cider vinegar, mustard, maple syrup, celery seed, salt, and pepper in a medium bowl.
  2. In a large bowl, toss together the cabbage, carrots, and scallions.
  3. Pour the dressing over the veggies and toss to coat.
  4. Season to taste with additional salt and pepper if desired.
  5. Serve immediately or refrigerate for up to 2 days.
