Ingredients

The greens

  • 3 pounds fresh collard greens

The seasoning

  • 1 teaspoon olive oil
  • cups chopped white onions
  • 2 cloves garlic
  • 1 leg or wing smoked turkey
  • cups chicken broth
  • 1 tablespoon Creole seasoning

Instructions

  1. Wash the collard greens thoroughly in water until clean.
  2. Remove the stems from the greens and slice them into smaller pieces.
  3. Heat a large pot or Dutch oven on medium-high heat and add olive oil, onions, and garlic.
  4. Sauté the onions and garlic until they are translucent and fragrant.
  5. Deglaze the pan by adding chicken broth.
  6. Layer in the greens in batches, allowing them to wilt down.
  7. Add Creole seasoning and the smoked turkey, then bring to a boil.
  8. Cover the pot, reduce the heat to medium, and let the greens cook for 2 hours or until tender.
  9. Remove the turkey leg, shred the meat, and return it to the pot.
  10. Serve the collard greens hot.
