Instructions
- Peel and cube the potatoes, rinse, and boil with salt until tender.
- Drain and rinse the potatoes, then mash with butter and milk, seasoning to taste.
- Combine dressing ingredients in a bowl and whisk until smooth.
- Preheat the oven to 425°F and prepare Brussels sprouts and sausage.
- Toss Brussels sprouts and sausage with olive oil and roast for 20-25 minutes.
- Assemble bowls with mashed potatoes, roasted Brussels sprouts, sausage, and drizzle with dressing.
