Ingredients

Mashed Potatoes

  • lbs russet potatoes
  • ½ tsp salt
  • 2 Tbsp butter
  • ½ cup milk

Creamy Dijon Dressing

  • 3 Tbsp olive oil
  • 1 Tbsp Dijon mustard
  • 1 Tbsp mayonnaise
  • 1 Tbsp red wine vinegar
  • tsp salt
  • ¼ tsp sugar
  • tsp garlic powder
  • to taste freshly cracked pepper

Roasted Brussels Sprouts and Sausage

  • 1 lb fresh Brussels sprouts
  • 12 oz vegetarian Italian sausage
  • 2 Tbsp olive oil

Instructions

  1. Peel and cube the potatoes, rinse, and boil with salt until tender.
  2. Drain and rinse the potatoes, then mash with butter and milk, seasoning to taste.
  3. Combine dressing ingredients in a bowl and whisk until smooth.
  4. Preheat the oven to 425°F and prepare Brussels sprouts and sausage.
  5. Toss Brussels sprouts and sausage with olive oil and roast for 20-25 minutes.
  6. Assemble bowls with mashed potatoes, roasted Brussels sprouts, sausage, and drizzle with dressing.
