Spicy Pepperoni Pizza

Ingredients

Dough

  • 1 package yeast
  • 1 cup luke warm water
  • 1 teaspoon salt
  • ¼ teaspoon sugar
  • cups white flour
  • cups semolina flour
  • 1 tablespoon olive oil

Pizza Toppings

  • to taste TABASCO® Original Red
  • to taste pepperoni
  • to taste caramelized onions
  • to taste mozzarella cheese
  • for dusting corn meal

Sauce

  • 1 small yellow onion, chopped
  • 2-3 cloves garlic, minced
  • to taste crushed red pepper
  • 1 teaspoon fennel
  • 1 small can tomato sauce
  • 1 can diced tomatoes, drained
  • 2 tablespoons tomato paste
  • a pinch sugar
  • to taste salt and pepper
  • 1 teaspoon dried oregano
  • 3 tablespoons fresh basil, chopped

Caramelized Onions

  • 2 red onions
  • 2 tablespoons unsalted butter
  • 1 teaspoon sugar (optional)

Instructions

  1. Preheat the oven to 500 degrees and place a pizza stone inside to heat.
  2. Once the dough has risen, punch it down and divide it in half. Roll out each half into circles about ¼ inch thick.
  3. Dust a pizza peel or baking sheet with corn meal and place the rolled dough on it.
  4. Spread the pizza sauce over the dough, add TABASCO sauce, pepperoni, caramelized onions, and mozzarella cheese.
  5. Gently slide the pizza onto the heated pizza stone and bake for 15-20 minutes until the crust is golden brown and the cheese is melted.
  6. Remove the pizza from the oven, let it cool for 5 minutes, then slice and serve.
