Ingredients

The chicken tenders

  • 1 lb chicken breast tenders
  • 2 eggs eggs
  • 3 tbsp nut or coconut milk

The coating

  • 1 cup almond flour
  • ¼ cup tapioca flour
  • ¼ cup paleo ranch seasoning
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. 1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. 2. In a shallow dish, mix almond flour, tapioca flour, ranch seasoning, salt, and pepper.
  3. 3. Whisk the eggs with the nut or coconut milk in a separate bowl.
  4. 4. Pat the chicken tenders dry with paper towels.
  5. 5. Dip each chicken tender into the egg mixture, ensuring it's well coated.
  6. 6. Dredge the egg-coated chicken tender in the flour mixture, pressing down to coat well.
  7. 7. Place the coated chicken tenders on the prepared baking sheet.
  8. 8. Bake for 9 minutes, then flip the tenders and bake for another 9 minutes.
  9. 9. Remove from the oven and serve with your favorite dipping sauces.
