Ingredients

The chicken tenders

  • 1 lb chicken breast tenders

The coating

  • ¾ cup almond flour
  • ¼ cup tapioca flour
  • 2 tsp garlic powder
  • 2 tsp paprika
  • 2 tsp parsley
  • 2 tsp turmeric
  • 1 tsp salt
  • 1 tsp pepper

The binding

  • 2 eggs

Instructions

  1. Preheat the oven to 400°F.
  2. Line a sheet pan with parchment paper.
  3. Combine almond flour, tapioca flour, spices, salt, and pepper on a plate.
  4. Whisk the eggs in a separate bowl.
  5. Coat each chicken tender in the egg mixture, then dredge in the flour mixture, ensuring it's well coated.
  6. Place the coated chicken tenders on the prepared baking sheet.
  7. Repeat the coating process for all chicken tenders.
  8. Bake in the oven for 20 minutes or until the internal temperature reaches 165°F.
