Ingredients

The chicken tenders

  • 2 lbs chicken tenders

The breading

  • ½ cup almond flour
  • ½ cup dessicated coconut
  • 1 egg egg
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • 1 tsp paprika
  • ¼ tsp cayenne pepper

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Wash and pat dry the chicken.
  3. In a small bowl, whisk the egg and set aside.
  4. In another bowl, mix almond flour, coconut, salt, pepper, garlic powder, paprika, and cayenne.
  5. Dip each chicken tender in the egg, letting excess drip off, then coat in the flour mixture.
  6. Press the chicken down to ensure it is fully coated, then place on the baking sheet.
  7. Once all tenders are coated, sprinkle a bit more flour mixture on top.
  8. Bake for 15-17 minutes, then broil for 2-3 minutes until crispy.
  9. Ensure the internal temperature of the chicken reaches at least 160°F.
  10. Garnish with parsley if desired and serve immediately.
