Ingredients

The chicken tenders

  • 2 lbs chicken tenders

The breading mixture

  • 1 cup almond flour
  • 3 tbsp coconut flour
  • 3 tbsp arrowroot flour
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1 tsp ground pepper

The binding

  • 4 eggs whisked eggs (can substitute nut milk or coconut milk)

The frying oil

  • ½ cup avocado oil

Instructions

  1. Combine all dry ingredients in a shallow dish and whisk together.
  2. Whisk the eggs in a separate bowl.
  3. Dip the chicken tenders in the eggs to coat, then dredge in the flour mixture.
  4. Heat avocado oil in a large skillet over medium-high heat until shimmering.
  5. Add the chicken pieces and cook undisturbed for 3-4 minutes until golden brown.
  6. Flip the chicken carefully and cook for another 3-4 minutes until cooked through.
  7. Serve with your favorite sauce and side.
