Ingredients

The sorbet base

  • 6 to 8 pieces fresh peaches, peeled and sliced
  • 2 cups water
  • cup raw sugar
  • 2 Tbsp organic honey
  • 2 tsp fresh lemon juice
  • ½ tsp lemon zest
  • 1 tsp fresh thyme

The finishing touch

  • 1 cup champagne

Instructions

  1. Combine peach slices, water, and sugar in a medium saucepan and mix until sugar dissolves.
  2. Bring the mixture to a boil, then simmer for about 15 minutes.
  3. Remove from heat and stir in honey, lemon juice, lemon zest, and fresh thyme.
  4. Let the mixture cool for 10 minutes.
  5. Puree the mixture in a blender or food processor until smooth, then chill in the fridge for 3 to 4 hours.
  6. Mix in champagne and pour into a frozen ice cream maker, mixing for about 20 minutes.
  7. Transfer the sorbet to the freezer overnight before serving.
