Sparkling Peach and Thyme Sorbet

The finishing touch
Instructions
- Combine peach slices, water, and sugar in a medium saucepan and mix until sugar dissolves.
- Bring the mixture to a boil, then simmer for about 15 minutes.
- Remove from heat and stir in honey, lemon juice, lemon zest, and fresh thyme.
- Let the mixture cool for 10 minutes.
- Puree the mixture in a blender or food processor until smooth, then chill in the fridge for 3 to 4 hours.
- Mix in champagne and pour into a frozen ice cream maker, mixing for about 20 minutes.
- Transfer the sorbet to the freezer overnight before serving.
