Ingredients

The pasta

  • 8 oz Penne Pasta

The broth and vegetables

  • 2 ¼ cups Chicken Broth
  • 4 oz Sun Dried Tomatoes in Oil
  • 1 tsp Garlic Powder
  • ¼ tsp Onion Powder
  • ¼ tsp Pepper
  • 4 Tbsp Pesto
  • 1 Tbsp Dried Parsley (optional)

The toppings

  • ½ cup Grated Parmesan Cheese
  • 12 oz Canned Chicken (optional)

Instructions

  1. Add the pasta to the pot of the pressure cooker.
  2. Pour in the broth.
  3. Add the sun dried tomatoes, reserved oil, garlic powder, onion powder, pepper, pesto, and parsley. Do not stir.
  4. Seal the pot and set to pressure cook for 5 minutes.
  5. Do a quick release of the pressure when cooking time ends.
  6. Stir the pasta, add the parmesan, and optionally some baby spinach.
  7. If using chicken, break it up and stir it in.
  8. Let it sit for a few minutes before serving.
