Unstuffed Pork Chops

Instructions
- Heat the olive oil in a skillet over medium-high heat.
- Add the sausage and brown it while breaking it up for about 2 to 3 minutes.
- Stir in the diced onion, bell pepper, celery, and apricots, cooking for another 2 to 3 minutes.
- Make space for the pork chops in the pan and sear each side until golden brown, a couple of minutes per side.
- Pour in the broth or water, cover the pan, reduce the heat to low, and cook until the pork chops are fully cooked, about 5 to 6 minutes.
- Remove the lid, stir in the heavy cream until well combined, and serve warm.
