Balsamic Grilled Chicken Thighs with Bruschetta

Ingredients

Balsamic Chicken

  • 2 lbs Just BARE Bone-in Chicken Thighs
  • salt and pepper to taste salt and pepper
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon dijon mustard
  • salt to taste salt

Bruschetta

  • 2 cups diced cherry tomatoes
  • cup fresh basil, chiffon
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • salt to taste salt

Instructions

  1. Preheat the grill to 375-400°F.
  2. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, dijon mustard, and salt. Set aside.
  3. Pat the chicken thighs dry and season with salt and pepper.
  4. Prepare the grill grates with cooking spray or oil, then place the chicken skin side down on the grill and cook for 5-6 minutes.
  5. Flip the chicken and cook for another 4-5 minutes until it releases easily from the grill.
  6. Brush the skin side with half of the balsamic glaze and close the lid to let it soak for 1-2 minutes.
  7. Check that the internal temperature of the chicken reaches 165°F, then remove it from the grill and let it rest for 2-3 minutes.
  8. Meanwhile, prepare the bruschetta by mixing diced tomatoes, basil, minced garlic, olive oil, and salt in a bowl.
  9. Serve the chicken thighs topped with the bruschetta mixture.
