Instructions
- Preheat the grill to 375-400°F.
- In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, dijon mustard, and salt. Set aside.
- Pat the chicken thighs dry and season with salt and pepper.
- Prepare the grill grates with cooking spray or oil, then place the chicken skin side down on the grill and cook for 5-6 minutes.
- Flip the chicken and cook for another 4-5 minutes until it releases easily from the grill.
- Brush the skin side with half of the balsamic glaze and close the lid to let it soak for 1-2 minutes.
- Check that the internal temperature of the chicken reaches 165°F, then remove it from the grill and let it rest for 2-3 minutes.
- Meanwhile, prepare the bruschetta by mixing diced tomatoes, basil, minced garlic, olive oil, and salt in a bowl.
- Serve the chicken thighs topped with the bruschetta mixture.
