Instructions
- Whisk together all-purpose flour, cake flour, baking powder, and salt in a bowl.
- In an electric mixer, cream together butter and sugar until fluffy, then mix in eggs and vanilla.
- Gradually add the dry ingredients to the wet mixture until combined.
- Divide the dough, shape into disks, cover, and chill for 3 hours or overnight.
- Preheat the oven to 375°F and roll out the dough to 3/8-inch thickness.
- Cut into 2½-inch rounds and bake for 7-9 minutes, then cool on a wire rack.
- Prepare the frosting by whipping together butter, cream cheese, and lemon zest until smooth, then mix in lemon juice, vanilla, lemon extract, and powdered sugar.
