Ingredients

Sugar Cookie Crust

  • ¾ cup salted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 teaspoon fresh lemon zest, optional
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Cream Cheese Frosting

  • ¼ cup salted butter, softened to room temperature
  • 8 ounces cream cheese, softened to room temperature
  • 1 tablespoon sour cream
  • ½ teaspoon vanilla extract
  • cups powdered sugar
  • a pinch salt

Fruit Toppings

  • to taste fresh strawberries, cut in half or quarters
  • to taste fresh blueberries
  • to taste red grapes, cut in half
  • to taste kiwi fruit, peeled and cut into triangles
  • to taste canned mandarin oranges, drained and patted dry
  • to taste canned pineapple tidbits or chunks, drained and patted dry

Instructions

  1. Preheat the oven to 350°F and line a half sheet pan with parchment paper, lightly greased.
  2. In a large bowl, cream together the butter and granulated sugar until smooth.
  3. Mix in the egg, egg yolk, vanilla, and optional lemon zest.
  4. Add the flour, baking powder, baking soda, and salt, mixing until combined.
  5. Press the dough into a rectangle shape in the center of the pan.
  6. Bake for 10-12 minutes until just baked, then let the crust cool completely.
  7. For the frosting, beat the butter and cream cheese until smooth, then add sour cream and vanilla.
  8. Mix in the powdered sugar and a pinch of salt until fluffy.
  9. Spread the frosting evenly on the cooled sugar cookie crust.
  10. Arrange the fruit on top and chill until serving.
