Ingredients

The feta-yogurt sauce

  • 4 oz feta, crumbled
  • ½ cup plain whole-milk Greek yogurt
  • 1 Tbsp. fresh lemon juice
  • 1 Tbsp. extra-virgin olive oil
  • 1 Tbsp. chopped mint
  • ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt
  • ¼ tsp. smoked paprika
  • Zest of 1 lemon
  • Freshly ground black pepper

The tomatoes

  • lb. mixed heirloom tomatoes, sliced, quartered, or halved
  • Flaky sea salt
  • Leaves for serving mint

The paprika oil

  • 2 Tbsp. extra-virgin olive oil

Instructions

  1. Step 1: Mash the feta in a bowl and mix with Greek yogurt, lemon zest, lemon juice, olive oil, and chopped mint. Season with black pepper and salt.
  2. Step 2: Heat the remaining olive oil in a saucepan, add smoked paprika, and cook until fragrant.
  3. Step 3: Transfer the feta mixture to a bowl, top with tomatoes, sprinkle with flaky sea salt and pepper, and drizzle with paprika oil. Garnish with mint leaves.
