Instructions
- Step 1: Mash the feta in a bowl and mix with Greek yogurt, lemon zest, lemon juice, olive oil, and chopped mint. Season with black pepper and salt.
- Step 2: Heat the remaining olive oil in a saucepan, add smoked paprika, and cook until fragrant.
- Step 3: Transfer the feta mixture to a bowl, top with tomatoes, sprinkle with flaky sea salt and pepper, and drizzle with paprika oil. Garnish with mint leaves.
