Ingredients

Blistered Cherry Tomatoes

  • 2 cups cherry tomatoes
  • 1 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 clove garlic, minced

Whipped Feta

  • cups feta cheese
  • 3 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 zest lemon

Hot Honey

  • 1 tbsp liquid honey
  • 1 tsp hot sauce
  • pinch chili flakes

For Serving

  • fresh pitas
  • fresh thyme

Instructions

  1. Heat olive oil in a frying pan over medium heat and add the cherry tomatoes, cooking undisturbed for about 5 minutes.
  2. Add salt, pepper, and minced garlic to the tomatoes, stir, and cook for another 1-2 minutes before removing from heat.
  3. Let the tomatoes cool in a bowl.
  4. In a food processor, combine feta cheese, lemon juice, olive oil, and lemon zest, pulsing until creamy.
  5. Mix honey, hot sauce, and chili flakes to create the hot honey.
  6. To serve, spread whipped feta on a plate, top with cooled tomatoes, drizzle with hot honey, and garnish with thyme. Serve with pitas.
