Ingredients

The whipped feta

  • cups feta cheese
  • 2 tbsp lemon juice
  • 1 tbsp feta brine
  • ½ lemon zest of
  • 1 tbsp olive oil

The toppings

  • cups chopped ripe peaches
  • 2 tbsp liquid honey
  • a pinch chili flakes
  • 1-2 tsp hot sauce
  • ½ cup halved baby tomatoes
  • ¼ cup chopped pistachios
  • to taste fresh mint for garnish
  • for serving pitas fresh or toasted

Instructions

  1. Blend feta cheese, feta brine, lemon juice, olive oil, and lemon zest in a food processor until smooth.
  2. Heat olive oil in a pan over medium heat, add peaches, and cook for 5-8 minutes until jammy.
  3. Mix honey, chili flakes, and hot sauce in a bowl to create hot honey.
  4. Layer whipped feta on a plate, followed by peaches, tomatoes, pistachios, and drizzle with hot honey.
  5. Serve with fresh or toasted pitas.
