Instructions
- Blanch sugar snap peas in salted water for 1 minute, then transfer to an ice bath for 5 minutes.
- Make the dressing by whisking together lemon zest, lemon juice, shallot, garlic, salt, pepper, olive oil, mustard, and honey.
- In a food processor, combine feta, cream cheese, olive oil, warm water, and lemon juice. Process until smooth.
- Slice the peas and toss them with the dressing and torn mint.
- Spread the whipped feta in a bowl, top with the peas, drizzle with dressing, and finish with lemon zest, flaky salt, and pepper.
- Serve immediately with toasted crusty bread.
