Whipped Feta Dip

Ingredients

The dip

  • 8 ounces feta
  • 4 ounces cream cheese
  • 3 tablespoons warm water
  • 2 sprigs mint
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice

The dressing

  • 1 small shallot
  • 1 small garlic clove
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 lemon zest and juice
  • ΒΌ cup extra virgin olive oil
  • kosher salt to taste
  • pepper to taste

The topping

  • 8 ounces sugar snap peas
  • 2 tablespoons kosher salt

For serving

  • to taste toasted crusty bread

Instructions

  1. Blanch sugar snap peas in salted water for 1 minute, then transfer to an ice bath for 5 minutes.
  2. Make the dressing by whisking together lemon zest, lemon juice, shallot, garlic, salt, pepper, olive oil, mustard, and honey.
  3. In a food processor, combine feta, cream cheese, olive oil, warm water, and lemon juice. Process until smooth.
  4. Slice the peas and toss them with the dressing and torn mint.
  5. Spread the whipped feta in a bowl, top with the peas, drizzle with dressing, and finish with lemon zest, flaky salt, and pepper.
  6. Serve immediately with toasted crusty bread.
