Blueberry Syrup

blueberry juice, grape juice or apple juice

Instructions
- Combine blueberries, 1 cup of juice, and sugar in a small saucepan and stir.
- Bring the mixture to a simmer over medium-high heat.
- Reduce the heat to low and let it simmer for 6 to 10 minutes, stirring occasionally, until many blueberries burst.
- In a small bowl, whisk together the remaining 2 Tbsp of juice with the cornstarch and pour it into the pan.
- Simmer for an additional minute while stirring constantly to thicken.
- Remove from heat and stir in lemon juice.
- Optionally, press through a mesh sieve to remove skins, blend for a smoother consistency, or serve as is.
