Blueberry Syrup

Ingredients

  • 2 cups fresh or frozen blueberries
  • 1 cup blueberry juice, grape juice or apple juice
  • 2 Tbsp blueberry juice, grape juice or apple juice (additional)
  • cup granulated sugar
  • 4 tsp cornstarch
  • 1 Tbsp lemon juice

Instructions

  1. Combine blueberries, 1 cup of juice, and sugar in a small saucepan and stir.
  2. Bring the mixture to a simmer over medium-high heat.
  3. Reduce the heat to low and let it simmer for 6 to 10 minutes, stirring occasionally, until many blueberries burst.
  4. In a small bowl, whisk together the remaining 2 Tbsp of juice with the cornstarch and pour it into the pan.
  5. Simmer for an additional minute while stirring constantly to thicken.
  6. Remove from heat and stir in lemon juice.
  7. Optionally, press through a mesh sieve to remove skins, blend for a smoother consistency, or serve as is.
