Authentic Chicken Fajita Marinade

Ingredients

The marinade

  • pounds boneless-skinless chicken breasts
  • 1 medium onion, sliced into ¼ inch rounds
  • ½ cup fresh cilantro, roughly chopped
  • ¼ cup lemon juice
  • ¼ cup oil of choice
  • ¼ cup water
  • 1 teaspoon salt
  • ½ teaspoon pepper

The vegetables

  • 1 medium red bell pepper, cut into strips
  • 1 medium green bell pepper, cut into strips
  • 6 oz sliced onion reserved from the marinade
  • 1 tablespoon olive oil

Instructions

  1. Slice the bell peppers and refrigerate.
  2. Slice the onions and place them in a large zip-loc bag.
  3. Add the marinade ingredients to the bag and mix well.
  4. Add the chicken to the bag, ensuring it's well coated with the marinade.
  5. Refrigerate the chicken overnight.
  6. Remove the chicken from the refrigerator and let it sit at room temperature for 30 minutes.
  7. Grill the chicken and let it rest.
  8. Cook the onions and bell peppers in a cast iron skillet until charred.
  9. Serve the chicken sliced with the charred vegetables, and optionally in tortillas with pico de gallo and guacamole.
