Authentic Chicken Fajita Marinade

The marinade

The vegetables

red bell pepper, cut into strips

green bell pepper, cut into strips

sliced onion reserved from the marinade

olive oil
Instructions
- Slice the bell peppers and refrigerate.
- Slice the onions and place them in a large zip-loc bag.
- Add the marinade ingredients to the bag and mix well.
- Add the chicken to the bag, ensuring it's well coated with the marinade.
- Refrigerate the chicken overnight.
- Remove the chicken from the refrigerator and let it sit at room temperature for 30 minutes.
- Grill the chicken and let it rest.
- Cook the onions and bell peppers in a cast iron skillet until charred.
- Serve the chicken sliced with the charred vegetables, and optionally in tortillas with pico de gallo and guacamole.
