Ingredients

The oatmeal

  • 1 can (13.5-ounce) coconut milk
  • 2 cups steel cut oats
  • 1 pinch salt
  • ¼ cup brown sugar
  • ½ teaspoon vanilla extract

For serving

  • to taste milk
  • to taste mini or regular chocolate chips
  • to taste coconut flakes
  • to taste chopped almonds

Instructions

  1. Grease the insert of the Instant Pot with nonstick cooking spray.
  2. In a measuring cup, combine the coconut milk and enough water to total 4 cups.
  3. Pour the mixture into the Instant Pot.
  4. Stir in the steel cut oats and salt.
  5. Secure the lid and set the valve to sealed. Select the Manual or Pressure Cook button and set for 4 minutes.
  6. After cooking, let the pressure naturally release for 15-20 minutes before manually releasing any remaining pressure.
  7. Stir in the brown sugar and vanilla.
  8. Serve with additional milk and any extra add-ins like chocolate chips, coconut flakes, and almonds.
