Ingredients

The oatmeal

  • 1 cup (250 mL) water
  • 1 cup (172 g) uncooked steel-cut oats

Serving suggestions

  • to taste syrup pure maple syrup
  • to taste toasted walnuts
  • a dash fine sea salt
  • to taste cinnamon
  • to taste raisins or chopped pitted Medjool dates

Instructions

  1. For stovetop method, combine coconut milk and water in a pot, bring to a boil.
  2. Add steel-cut oats, stir, reduce heat to low, and simmer covered for 30 to 40 minutes, stirring occasionally.
  3. For a porridge-like consistency, stir in additional water after cooking.
  4. Portion into bowls and top with desired garnishes.
  5. For Instant Pot method, add coconut milk, water, and oats to the pot, stir, and secure the lid.
  6. Set to pressure cook on high for 7 minutes, then allow for natural pressure release for 10 minutes.
  7. Release remaining steam, stir the oatmeal, and add more milk or water if desired.
  8. Portion into bowls and top with desired garnishes.
