Ingredients

The salad

  • 2 long English cucumbers, peels left on, thinly sliced
  • 1 bunch radishes, thinly sliced
  • 1 ½ teaspoons kosher salt, divided

The dressing

  • ¾ cup plain nonfat Greek yogurt
  • 2 teaspoons white vinegar
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • ½ teaspoon ground black pepper
  • 3 tablespoons finely chopped fresh dill
  • 3 tablespoons chopped chives

Instructions

  1. Combine cucumbers, radishes, and 1 teaspoon of salt in a medium bowl and let sit for 30 minutes.
  2. Drain the mixture in a colander to remove excess moisture.
  3. In a separate bowl, whisk together Greek yogurt, vinegar, honey, garlic, pepper, and remaining salt.
  4. Add half of the dressing to the cucumber and radish mixture, stirring until well coated.
  5. Add more dressing to reach desired creaminess, then stir in dill and chives.
  6. Taste and adjust seasoning with additional salt and pepper if needed.
  7. Refrigerate for 1 hour before serving.
