Ingredients

The salad

  • 2 medium cucumbers, thinly sliced
  • ½ large red onion, sliced
  • ¾ teaspoon salt, separated
  • ½ teaspoon garlic powder
  • ¼ teaspoon pepper
  • 3 tablespoons chopped fresh dill

The dressing

  • ½ cup plain, nonfat Greek yogurt
  • 2 teaspoons apple cider vinegar
  • 2 tablespoons lemon juice
  • 1 teaspoon honey

Instructions

  1. Slice the cucumbers and place them in a strainer, sprinkling with ½ teaspoon salt. Let them sit for at least 15 minutes to draw out water.
  2. In a large bowl, whisk together Greek yogurt, apple cider vinegar, lemon juice, honey, ¼ teaspoon salt, garlic powder, and pepper to make the dressing.
  3. Add sliced red onion and fresh dill to the dressing and mix well.
  4. Rinse the cucumbers to remove excess salt, pat them dry, and add them to the dressing. Mix until the cucumbers are well coated.
  5. Serve immediately or refrigerate to chill before serving.
