Creamy Cucumber Salad

The salad

cucumbers, thinly sliced

The dressing

plain, nonfat Greek yogurt

apple cider vinegar

lemon juice

honey
Instructions
- Slice the cucumbers and place them in a strainer, sprinkling with ½ teaspoon salt. Let them sit for at least 15 minutes to draw out water.
- In a large bowl, whisk together Greek yogurt, apple cider vinegar, lemon juice, honey, ¼ teaspoon salt, garlic powder, and pepper to make the dressing.
- Add sliced red onion and fresh dill to the dressing and mix well.
- Rinse the cucumbers to remove excess salt, pat them dry, and add them to the dressing. Mix until the cucumbers are well coated.
- Serve immediately or refrigerate to chill before serving.
