Ingredients

The base

  • 2 large avocados
  • cups canned coconut milk
  • ¾ cup sugar
  • 1 cup heavy cream

Optional garnish

  • 1 cup fresh mint

Instructions

  1. Blend all the ingredients in a high-speed blender or food processor until smooth.
  2. Transfer the mixture to a bowl and refrigerate for 3 hours to thicken and chill.
  3. If using an ice cream maker, churn the mixture according to the manufacturer's instructions.
  4. If not using an ice cream maker, transfer the mixture to a freezer-friendly container and freeze, stirring every 30 minutes until it reaches the desired texture.
  5. Let the ice cream sit at room temperature for 15 minutes before serving.
