Instructions
- Blend the avocados, coconut milk, maple syrup, and peppermint extract until smooth.
- Taste and adjust sweetness or peppermint flavor as needed.
- Pour the mixture into an ice cream maker and churn according to the manufacturer's directions for 20 to 25 minutes.
- Alternatively, pour the mixture into a loaf pan and freeze for 4 to 6 hours until firm.
- If using, stir in cacao nibs before serving.
