Ingredients

The base

  • 2 whole avocados
  • 1 can coconut milk
  • cup maple syrup
  • 1 teaspoon peppermint extract

Optional add-ins

  • 3 tablespoons cacao nibs

Instructions

  1. Blend the avocados, coconut milk, maple syrup, and peppermint extract until smooth.
  2. Taste and adjust sweetness or peppermint flavor as needed.
  3. Pour the mixture into an ice cream maker and churn according to the manufacturer's directions for 20 to 25 minutes.
  4. Alternatively, pour the mixture into a loaf pan and freeze for 4 to 6 hours until firm.
  5. If using, stir in cacao nibs before serving.
  6. Serve immediately or store in an airtight container in the freezer.
