Ingredients

Goat Cheese Grits

  • 1 cup grits
  • 4 cups water
  • ¼ teaspoon salt
  • 4 oz. goat cheese

Roasted Vegetables

  • 1 large red pepper, cut into 1” cubes
  • ½ large red onion, cut into 1” cubes
  • 1 large zucchini, sliced into ½” slices
  • 1 large yellow squash, sliced into ½” slices
  • 1 pint cherry tomatoes
  • 2–3 tablespoons olive oil
  • to taste salt & pepper

Other Ingredients

  • 4 eggs
  • to taste chopped chives (optional for garnish)

Instructions

  1. 1. Preheat the oven to 400 degrees.
  2. 2. Toss red onion, red pepper, zucchini, yellow squash, and cherry tomatoes with olive oil, salt, and pepper on a baking sheet and spread them out in a single layer.
  3. 3. Roast the vegetables for 30 minutes.
  4. 4. In a large pot, bring water and salt to a rolling boil.
  5. 5. Gradually add the grits while whisking to prevent clumping, then reduce the heat and cook for 5 minutes, stirring frequently.
  6. 6. Stir in the goat cheese until melted.
  7. 7. In a non-stick pan, cook the eggs on medium-high heat, seasoning with salt and pepper, then cover and let sit for 4 minutes until the whites are cooked.
  8. 8. Serve the grits topped with roasted vegetables and a fried egg.
