Instructions
- 1. Preheat the oven to 400 degrees.
- 2. Toss red onion, red pepper, zucchini, yellow squash, and cherry tomatoes with olive oil, salt, and pepper on a baking sheet and spread them out in a single layer.
- 3. Roast the vegetables for 30 minutes.
- 4. In a large pot, bring water and salt to a rolling boil.
- 5. Gradually add the grits while whisking to prevent clumping, then reduce the heat and cook for 5 minutes, stirring frequently.
- 6. Stir in the goat cheese until melted.
- 7. In a non-stick pan, cook the eggs on medium-high heat, seasoning with salt and pepper, then cover and let sit for 4 minutes until the whites are cooked.
- 8. Serve the grits topped with roasted vegetables and a fried egg.
