Crispy Baked Gochujang Tofu

Ingredients

The tofu

  • 1 package super firm tofu (14-16 oz)
  • 4 tsp olive or avocado oil

The sauce

  • 2-3 Tbsp gochujang
  • 2 Tbsp lime juice
  • 1-2 Tbsp maple syrup
  • 2 Tbsp water
  • 3-4 tsp gochugaru (optional)
  • ½-¾ tsp ground cayenne (optional)
  • 1 ½ tsp cornstarch

For serving

  • optional Quick Cabbage-Apple Slaw or kimchi
  • optional White Rice

Instructions

  1. Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. Crumble the tofu into ~½-inch pieces and arrange on the baking sheet. Toss with oil to coat.
  3. Bake for 20 minutes, then flip the tofu and bake for an additional 5-15 minutes until golden and crispy.
  4. In a saucepan, combine gochujang, lime juice, maple syrup, and water, whisking to combine.
  5. Adjust the sauce for spice, adding gochugaru and cayenne if desired, then add cornstarch and whisk until smooth.
  6. Heat the sauce over medium-high, whisking until it thickens, about 5-8 minutes.
  7. Combine the baked tofu with the sauce and serve warm or at room temperature.
